- 1 Cup Cold butter, cut into ½” pieces
- 1 cup Packed brown sugar
- 2 cups Fruit & Nut Granola
- 1 ½ cup Flour
- 1 tsp Baking Soda
- 1 cup Greek Yogurt
- 1 tsp Lemon Juice
- 2 Tbsp Flour
- 2/3 Cup Sugar
- 1/2 Cup Chopped toasted pecans
- Filling:
- 1/2 tsp vanilla
- 1 Tbsp bourbon whiskey
- 1/2 tsp cinnamon
- 1 egg
- 3 large tart apples – peeled, cored and small diced
How to Prepare Granola Crumb with Apple Yogurt
- Put 1 cup of chilled butter, cut into 1/2-inch pieces, 1 cup of packed brown sugar, 2 cups of fruit and nut granola, and 1 1/2 cups of flour in a food processor (optional; otherwise, thoroughly combine all the ingredients in a bowl or mixer).
- Pulse one teaspoon of baking soda until a crumb mixture forms. Form a shell along the bottom and up the sides of a large 10-inch pie dish by pressing half of the mixture into it. Bake for ten minutes in the oven.
- Store the remaining half of the crumb mixture in the refrigerator for the topping.
- Meanwhile, combine in a basin One cup Greek yogurt, one teaspoon lemon juice, two tablespoons flour, two-thirds cup sugar, and half a cup chopped toasted nuts. After the shell is finished, take it out of the oven, allow it to cool for ten minutes, and then fill it. Bake for half an hour.
- Take the pie out of the oven and sprinkle the chilled crumb mixture over it. Bake for a further 20 minutes. Before serving, take it out of the oven and give it at least half an hour to rest.
